Jimmy Barnes latest hit is pretty crumby … literally. The Barnes family is manufacturing their own brand of Shortbread for Christmas.
The Jimmy Barnes Family Traditional Shortbread Biscuits are a limited edition in a presentation tin and not available in stores.
Shortbread originated in Scotland. The first printed recipe was in 1736. In early Scotland, shortbread was a luxury and therefore traditionally kept for special occasions such as weddings, Christmas and New Year.
It is known as the medieval “biscuit bread”. Any leftover dough from bread making was dried out in a low oven until it hardened into a type of rusk: the word “biscuit” means “twice cooked”. Gradually the yeast in the bread was replaced by butter, and biscuit bread developed into shortbread.
